Separate the egg yolk and egg white. There should be no egg yolk mixed in the egg white. Remember: the bowl used must be water-free and oil-free, and your hands must be kept dry.

Use a whisk to beat the egg yolk clockwise. You can use three chopsticks instead of the whisk.

Use an ordinary porcelain spoon to scoop two tablespoons of sugar into the beaten egg yolks. Stir gently and evenly clockwise until the egg yolk turns slightly white.

Add 5 tablespoons of milk into the egg yolks and mix evenly clockwise.

Add 50ml of oil to the egg yolk. It is best to use colorless and odorless vegetable oil. Stir evenly and clockwise until completely combined.

Use a fine sieve to sift 100g of low-gluten flour into the egg yolk liquid (the sifted flour will make the cake softer and prevent dimples). If you do not have low-gluten flour, you can use 80g of ordinary flour and 20g of cornstarch instead.

Use a large spoon or spatula to stir up and down, just like stir-frying. Do not stir in circles.

Stir until the egg yolks are completely blended and then stir evenly, without any particles, and the color will be bright and clear.

Set the egg yolks aside. Start beating the egg whites, pour a few drops of white vinegar (the cake will be softer), and pour in the sugar. During the process of beating the egg whites, pour the sugar in three times. If you don’t have an electric egg beater, you can use three chopsticks (dry, water-free and oil-free). Remember: there is no egg yolk in the egg white, and the egg beater must be water-free and oil-free. When beating egg whites, stir clockwise and do not change the direction.

Beat all the egg whites until they become egg whites. Inspection standard: The egg white container is turned upside down and the egg white does not fall off. Beating egg whites is the key to determining whether the cake can rise and whether the cake is fluffy.

While heating the rice cooker, add the egg whites to the egg yolk liquid in three batches and stir evenly. Do not stir in circles. Stir up and down like stir-frying.

When the rice cooker automatically jumps from the heating state to the keep warm state, pour the cake batter into the rice cooker. Use a flat spoon to smooth out the cake batter and squeeze out air bubbles. Cover the rice cooker lid, wait for the rice cooker to automatically jump from the heating state to the keep warm state, and let it simmer for 20 minutes. When the time is up, press the heating button again to jump to the keep warm state and let it sit for 40 minutes. Remember: While the rice cooker is steaming the cake, do not open the lid of the rice cooker, otherwise the cake will not rise.
