Fennel and pork dumplings are loved and hated by some, as elusive as cilantro. Of course I am a fan of fennel dumplings, so I make my favorite fennel pork dumplings.

Dumpling powder, fennel, pork filling, eggs, salt, minced onion and ginger, sesame oil, dark soy sauce, rice wine.

Add warm water to the flour and knead into a uniform and shiny dough. Wrap it in a damp cloth and let it rest for 30 minutes.

Add chopped green onion, ginger, sesame oil, rice wine, and eggs into the pork filling, stir evenly in the same direction, then add dark soy sauce, and stir thoroughly in the same direction to make the pork filling strong.

Wash the fennel, drain and cut into minced fennel. Stir the minced fennel into the pork filling, add an appropriate amount of salt, and stir evenly.

Knead the dough into long strips, cut into pieces, flatten, and roll into dumpling wrappers. Wrap the fennel and pork filling into the dumpling wrappers to form fennel and pork dumplings.
