What I will introduce below is how to make a pistachio cookie, which highlights the buttery flavor and crispiness of pistachios. The cookie recipe comes from the French Le Cordon Bleu School and has been slightly adjusted. We can also use almonds, hazelnuts, cranberries, etc. to make DIY cookies according to our own preferences.
Cookie Ingredients:
1. Animal-based unsalted butter: 150 grams (butter is the soul of a biscuit. I like the president’s light butter rolls very much. The aroma is richer than the square ones)
2. Fine sugar: 30 grams (sugar is the soul of a biscuit and is also a very important part. I use Taikoo fine sugar with moderate particle size. The original dosage is 100 grams. Decrease by three points. 2)
3. Egg: half (egg is the soul of a biscuit, please buy fresh eggs and warm them indoors in advance, do not use them directly from the refrigerator, and beat them well in advance)
4. Flour: 200 grams (flour is the soul of a biscuit. You can use low-gluten or medium-gluten flour. Do not use self-rising flour or bread flour. The brand I use is GOLD from Germany)
5. Pistachio kernels: 50 grams (yes, also soul, original and salt-free roasted)
The following ingredients are optional. If you do not add them, they will have little impact. If you add them, the flavor will be more prominent.

8. Vanilla pod: one-third (you can also use vanilla extract or powder sold in imported supermarkets. I am very paranoid about choosing natural vanilla seeds from Madagascar because it is always good to reduce the processing steps as much as possible)

Step1: Please explain that I am making 8 portions at a time. If you only make one or two portions, you can use your hands to spread it evenly. You don’t need to use a chef’s machine or blender. The butter should be softened at room temperature in advance and pressed with your fingers. As long as there is an obvious indentation on it, knead the butter into a puree with your hands, then add fine sugar, vanilla seeds, and lemon zest and continue kneading.
Step2: When you feel the mixture is even, pour half of the beaten egg liquid into the mixture and mix well, then add the other half and mix until smooth.
Step3: At this time, sift together the flour and salt and pour it into a basin. Sifting is a very necessary step. In addition to filtering out lumps or particles of flour, more importantly, it can make the fallen flour fluffy and filled with air. , which is more conducive to thorough mixing.
