How to make lemon heavy cheese, the recipe comes from the British BBC~The original recipe also adds 15G cake flour and lemon zest. The whole making process takes 30-45 minutes.
Main ingredients
Cream cheese (I use soft cheese) 300G, light cream 150ML
1 egg and 1 yolk
90G sugar, 3 tablespoons lemon juice
Excipients
7 pieces of palm-sized digestive biscuits and 30G of butter
Steps
1. Add 1.5 tablespoons lemon juice to 150ML of whipping cream
2. Mix well and make a very thick yogurt-like lemon cream, set aside
3. Add 90G of sugar and 1.5 tablespoons of lemon juice to the soft cheese and mix well (it’s best to use cream cheese. I don’t have any and can only use this instead)
4. Add an egg and mix well
5. Add another egg yolk and mix well
6. Add 100ML lemon cream completed in step 2 and mix well to complete the cake batter
7. Crush the digestive biscuits and mix in the melted butter, pour it into the bottom of the mold and press it flat
8. Pour in the mixed cake batter and bake it in the oven (I use 175℃ single heat for 40 minutes. The dormitory oven only has high heat)
9. Add 1 teaspoon of sugar and 2 teaspoons of lemon juice to the remaining 50ML lemon cream, mix well and pour on the surface. Let cool and refrigerate overnight (or make it in the morning and eat it at night~)
10. The finished product~decorated with some lemon gummies~
