I really like Uncle Tetsu’s light cheese cheesecake! I’ve been thinking about how to make Uncle Cheji’s light cheese cheesecake. I’d like to share with you my experience in making a cheesecake that doesn’t crack, becomes wet, or collapse.
Materials:
80g cream cheese, sugar A (15g), 25g plain yogurt, 2 egg yolks, 40g light cream, corn 15g starch, 2 egg whites, sugar B (20g).

Separate the egg yolk and egg white. Egg white cannot be mixed with egg yolk, so the container is water-free and oil-free.

Pour cream cheese and sugar A (15g) into a basin and beat with an egg beater until creamy. A little heat will help the cheese melt.

A sugary cheese paste forms.

Add egg yolks to the cheese paste and stir evenly in a clockwise direction.

Add light cream and beat clockwise until even.

Add cornstarch and yogurt and beat evenly in a clockwise direction.

Beat the egg yolk batter evenly until it becomes a smooth, delicate and grain-free batter. Place it in the refrigerator for later use.

Next, beat the egg whites: Beat the egg whites with a whisk. When rough foam appears, add half of the sugar B.

Continue to beat the egg whites, add the remaining sugar B halfway, and continue to beat the egg whites into meringue. Lift the whisk until the egg whites form stiff peaks.

Add the beaten meringue into the egg yolk batter in three batches, and mix evenly from bottom to top to form a cheesecake batter.

Pour the cheesecake batter into the mold and shake it a few times to release air bubbles.

Fill the baking pan with water, put the mold into the water in the baking pan, and bake. Preheat the oven to 170 degrees and bake for 45 minutes.
