  7. Beat the egg yolk batter evenly until it becomes a smooth, delicate and grain-free batter. Place it in the refrigerator for later use.

  8. Next, beat the egg whites: Beat the egg whites with a whisk. When rough foam appears, add half of the sugar B.

  9. Continue to beat the egg whites, add the remaining sugar B halfway, and continue to beat the egg whites into meringue. Lift the whisk until the egg whites form stiff peaks.
