How to do it:

1. Prepare the raw materials: flour, cornmeal, millet flour, honey red beans, yeast, white sugar (the white sugar is not photographed)

2. Put flour, cornmeal, millet flour, yeast powder, and white sugar into a basin and mix evenly, then add warm water little by little.

3. Add warm water little by little and stir with chopsticks to form a wet dough, as shown in the picture above.

4. Add honey red beans. (The honey red beans are also cooked by myself)

5. Add honey red beans and stir evenly with chopsticks.

6. Pour the mixed wet dough directly into the oiled cake mold and leave it in a warm place to rise. (If you don’t have a cake mold, you can put it directly into a small stainless steel basin)

7. When the wet dough has risen to 1.5 times in size, put it into the steamer together with the cake mold.

8. Turn on medium heat and give the steamed cake time to rise again. After the steam is on, turn to high heat and steam for 30 minutes. Turn off the heat. Do not rush to remove the lid. Let it simmer for three to five minutes before taking it out and demoulding.

Notes on making cornmeal cakes:

1. Melt the yeast powder with milk in advance. When used as yeast solution, the yeast can fully contact the flour;

2. This type of cake can use ordinary flour, and there is no need to use cake flour like cake;

3. Adding a little fine sugar to the flour not only makes the taste better, but also helps fermentation;

4. Since only yeast is used, the cake has a solid texture. If you are looking for softness, you can add an appropriate amount of baking powder at the same time.

Notes on eating cornmeal steamed cakes:

Corn flour (yellow): Avoid eating corn with snails, otherwise it will cause poisoning; try to avoid eating it with oysters, otherwise it will hinder the absorption of zinc.
