Let us officially start DIY, first introduce the materials required for these three kinds of vinegar:
Tarragon Orange Vinegar:
1 teaspoon orange peel
2-3 sprigs of fresh artemisia
Blue Blackberry Lavender Vinegar
6-8 blueberries
4-6 blackberries
2 teaspoons lavender bud garlic chili vinegar
Garlic chili vinegar
2-3 dried chilies
2-3 garlic cloves
1 teaspoon brown mustard seeds
1 teaspoon coriander seeds
Preparation method:
Choose a glass container based on your preferences. I keep all kinds of used glass bottles on hand to prepare for this. Sterilize and dry the bottles.
Put the materials of your choice into the glass container. If necessary, you can use chopsticks or bamboo skewers to poke the materials in.
Measure a moderate amount of wine vinegar to your container (not too full) and heat the vinegar, but not to a boil.
Use a funnel to pour warm vinegar into the glass container.
Store in a cool place without direct sunlight [such as in a cupboard] for two weeks, taking it out and shaking it a few times from time to time.
Strain to remove large floating particles and add some to reconstitute the infusion vinegar if necessary. Put a label on it.
