DIY transparent jelly cake for Father’s Day, like a real koi pond

Inspired by the beauty of Japans koi pond, Canadian baker Grace created a mousse jelly cake for Fathers Day that looks just like the real thing. Incredibly, she encases colorful fish (made from bean paste) in clear gelatin to meticulously mimic a pond. The beautiful koi fish even look like they are swimming gracefully in a blue pond.

Graces cake ingredients include a black sesame chiffon cake base, followed by white chocolate mousse and blueberry mousse. The top translucent layer is made of agar almond jelly (vegetable-based gelatin). It may look like a real pond, but every part is edible, even koi fish, lily pads, and bamboo cattail stems can be enjoyed!

"I decided to give it a try this week and I'm so glad I did." She worked until 5am making this cake for her father. But she relished the challenge, and her hard work definitely paid off. "This was my first time using a hummus and agar-based jelly, so there was a lot of trial and error," Grace revealed. "I like to do small and complicated things, it makes me very interesting."
